by Mollie Katzan, from the original Moosewood Cookbook, 1977. by Susan K-M Invented Black Bean Ravioli "Lasagna". Sautee some baby bok choy, a couple of yellow squash, a few carrots, a red bell pepper (or whatever your preference), all sliced or diced, in olive oil. Cook a package La Bella Pasta fresh black bean ravioli (substitute ravioli available to you) in 6 cups boiling water, and drain. Oil a baking pan. Layer this way: Cooked veggies first. Then the drained ravioli. Then spread some pesto sauce on top. Cover with slices of havarti. Dot with a little bit of butter. Bake a short while, until all melds together, & cheese melts, but still retains its shape. THIS IS YUMMY! |
